These Chocolate Peppermint Protein Balls are creamy, crunchy, chocolatey, and have just the right amount of holiday cheer — without the gut drama.
Made with CorePerform protein, they pack in extra nutrition, are free from dairy and gums, and are ready in under 15 minutes.
INGREDIENTS:
- 1 scoop CorePerform Protein Powder (Chocolate Hazelnut or Maple Banana Bread)
- 3/4 cup peanut butter
- 2 tbsp honey
- 1 tsp vanilla
- 2 tbsp cocoa powder
- 1/2 cup dark chocolate (for melting)
- 1 tsp coconut oil
- Crushed peppermint candies (for coating)
DIRECTIONS:
- In a large bowl, mix together the peanut butter, honey, vanilla, cocoa powder, and protein powder until a thick dough forms.
- Roll into bite-sized balls and place on a parchment-lined tray.
- Melt dark chocolate chips with coconut oil until smooth.
- Dip each ball in chocolate, place back on the tray, and sprinkle with crushed peppermint.
- Chill in the fridge for 15–20 minutes until set.
- Store in an airtight container in the fridge for up to a week!
