The perfect autumn (or for when you are simply missing the fall leaves) recipe awaits you, Morgs' healthy protein apple streusel muffins (check her out on Instagram). They are easy to make, and don't require many ingredients! So what's your excuse for not making them yet?
Ingredients
Wet
- 3 eggs
- 2 large ripe bananas, mashed
- 1/2 cup applesauce
- Splash of vanilla
- 2 tbsp maple syrup
Dry
- Pinch of salt
- Pinch of cinnamon
- Pinch of baking soda
- 2 scoops CorePerform Protein Powder
- 80g coconut flour
- 1 chopped up apple
Topping
- 20g almond flour
- 20g coconut sugar
- 1 tbsp coconut oil
Instructions
Combine wet ingredients in a bowl, and set aside. Combine dry ingredients, and combine with wet ingredients. Combine topping ingredients in a separate bowl. Scoop out muffin batter into a greased muffin pan. Add a spoon of topping to each muffin.
