Chicken rice grain bowl with cheese, greens, kale, tomatoes, nuts, and quinoa

Sweet Grain Chicken Bowl

For anyone who read my post about why you should eat white rice, I mentioned that one of my FAVORITE ways to get in a nutrient-dense meal while spiking insulin levels was this sweet grain bowl.

It's so easy to make, smells delicious, and tastes even better. Trust me, the combination sounds weird but is so, so, good.

This can easily be served without the chicken being made vegan, doubled/tripled, or you can serve it atop greens on a salad!

  • 1/2 cup diced sweet potato (100g)
  • 4 oz chicken breast
  • 1 tbsp raisins (14g)
  • 1/2 cup brown rice, cooked (100g)
  • 1 tsp agave nectar (4g)

While brown rice is cooking, dice sweet potato. Wrap in a damp paper towel and microwave ~2.5 mins. Spray a pan with PAM and cook the chicken breast. Combine all ingredients into a  bowl, sprinkle with cinnamon, and drizzle agave.

*I like to also add half a packet of stevia to make it extra sweet.
